More Than Just a Farmhouse Ale
Farmhouse Saisons were originally brewed for farm workers when potable water was not available during the harvest. It’s unclear when it was that an inventive farmer decided to age his beer in wooden casks, but since that time, wood-aged Saisons have taken the style to a whole new level.
Ghost in the Wood Saison
Bruz decided a while back to age our traditional spelt saison in one of our large oak fouders. The results were amazing! With multiple uses over time, the wooden vessel acquired more funky and sour characteristics. The wild aromas and flavors come not just from the classic ingredients, but also from the ethereal spirit that resides in the wood of the fouder. This “ghost” in the wood inspired our name for this unique and very special Saison.
A Wild Symphony of Aromas and Flavors
Ghost in the Wood is golden amber and clear, with a dense white head. Its aroma exhibits notes of tart fruits—tangerines, strawberries and peaches. On the palate, its flavors are fruit-forward with citrus and tart apricots. Its sturdy malt backbone of heirloom wheat, local barley is balanced by noble hops and hints of wild yeast. Fouder-aging infuses the beer with pleasant touches of oak, funk and acidity. Its gentle, natural sourness, crisp carbonation and dry finish make Ghost in the Wood a highly drinkable take on a classic Belgian style.
